Q: How do I save money in dairy labs and cheese manufacturing?

By implementing products manufactured by Metron Instruments you can accurately determine the constituency of your products and accurately determine fat/casein ratios  and implement either at line or on line controls to improve product consistency and maximise the use of raw materials.

York Dairy Analyser

B.E.S.T are pleased to announce  the release of the new York Dairy Analyser.  Designed to meet the needs of routine dairy labs the York analyzer features easy to use software and provides results for the typical range of dairy parameters quickly and easily. Using proven Mid IR technology the York Analyser analyses for fat, protein, lactose, Solids Non Fat and Total Solids in less than 60 seconds. Typical analysis ranges and accuracies are as follows;

Fat  0 to 60% +/- 0.03%;  Protein 0 to 10% +/-0.03%;

Lactose 0 to 15% +/- 0.03%; Solids Non Fat 0 to 15% +/- 0.10%;

Total Solids 0 to 60% +/- 0.10%.  Sample volume required for analysis is typically 5 to 15ml and the system is compact taking only about 30cm of bench space.  The York uses Mid IR technology for the analysis and this technology has been adopted as an ISO and AOAC test method ensuring consistent results comparable to other systems in use around the world.  The sample is automatically homogenized and analysed and results are displayed immediately on the York software on the accompanying PC.

Brewster Fat and Casein Analyser

If you are still measuring protein and using a factor to estimate Casein values and using this in the Van Slyke formula for cheese production then you are probably wasting money. It is known that proper casein to fat ratio control is essential for quality cheese manufacture.  It is equally well known that casein as a percentage of protein varies significantly based on breed, feeding conditions and seasonal variations.  The Brewster system allows rapid analysis of milk samples for accurate concentrations of fat and casein.  No more guesswork! Using a patented laser light scattering technology the Brewster discriminates between component particle size to obtain fat and casein measurements without interference from other milk components. The Brewster LF provides tight control of fat content for the most profitable use of raw milk possible. The Brewster LFC will improve the accuracy of the casein-to-fat ratio for more consistent cheese products and optimized yield.

On Line Standardisation & Smart Valve Technology

On line instrumentation from Metron Instruments can automatically measure and control fat, protein, lactose, solids, casein and brix in a variety of liquids. Typically dairy applications use the on line standardisation measurement system with automated “Smart” valve technology to improve product consistancy and control additives to accurate levels.  The Smart valves have a resolution of 0.05% enabling accurate and repeatable ingredient addition to ensure that product specifications are tightly controlled, generally to within 0.02%

Typical installations control fat or solids content of milk, or accurately measure and control casein in milk processing installations.  These systems can optimize ingredient addition, improve product quality and improve labour productivity and generally have payback periods around 12 months.
